Sandro Loizzo brings Puglia to Fancy Food, between bread and new ideas

From the traditions of Altamura, in the heart of Puglia, to the showcases of the Fancy Food Show in New York. Unibrands Italia, with its brand Novoforno, is a company that has been working for over twenty years on foreign markets, bringing around the world the bread of Altamura DOP, as well as focacce, pizza bases and other baked products of the Apulian tradition. At the Summer Fancy Food Show we met the unique manager Sandro Loizzo, who told the last idea of the company, a baked bread.

From the traditions of Altamura to the Fancy Food Show in New York, what was the route that brought you here?

We have experience in international markets for over twenty years, and our increased turnover we make it abroad. They helped us collaborate with chef Fabrizio Facchini and the support of Universal Marketing, the Italian Trade Agency and the Chamber of Commerce, which give Italian companies the opportunity to present themselves in international showcases like the Fancy Food. The experience on foreign markets has led us to realize typical local products with the influence of international tastes, and our choice is getting a huge success.

How is Unibrands born?

We are born as a society with very strong roots, because we have production in the heart of Puglia, and specifically in Altamura, the land of durum wheat semolinas. It’s from there, from that tradition, that everything we do starts.

This is Fancy Food Show in New York. How important is it for Unibrands to be present at an international event like this?

For us it has always been a very important showcase, because we are a company that addresses foreign markets. Fancy Food allows us to have a much wider visibility than what could offer a showcase at national level.

What are the main news you have chosen to present this year?

The novelty is our Pan Chips, a product that comes from a story, that of Altamura DOP bread. In addition to bread, we also produce focaccia and pizza bases, other historical products of the Apulian tradition. The basic ingredients of the Pan Chips are those of the bread, the semolina rimacinata of durum wheat, and we have brought them to realize a crisp of bread that, baked in the oven, is a particular and very good product.

How was the idea of turning Altamura’s bread into a snack?

The idea arises from the desire to value an iconic product such as the bread of Altamura, known and appreciated all over the world, but expanding its consumption opportunities. We wanted to create something more practical and accessible, able to reach even a younger audience or who is looking for a simple but quality snack.

From here a versatile snack, which can be enjoyed alone or used in catering, for example as a base for finger food. In this way we combine tradition and innovation, bringing Altamura bread into new and more dynamic contexts.

It is a more original snack, more versatile and more suitable for catering, where it can be proposed as a finger food or creative accompaniment, offering a different and more characterizing alternative to traditional snacks.
