CCF & District Fishing: A tasting dedicated to Sicily in New York

It took place yesterday, at the headquarters of the Columbus Citizen Foundation in New York, the CCF and the Fishing District. The event was organized in collaboration with the Fisheries District, a reality that promotes the Italian supply chain of Sicily, and was the protagonist of the chef Giuseppe Costa, called to lead a live culinary demonstration. The evening developed as an interactive showcase, with free guests moving between different tasting stations while the chef showed preparations and techniques related to the Sicilian marine tradition.

Costa, born in Alcamo in 1982 and raised in Montelepre, built its path between Italy and Europe. After training at the hotel institute in Trapani, he worked in different kitchens between Trentino and Brussels, then returning to Italy in contexts of high catering. Among the most significant stages, the experience at the restaurant “Maremma” with Heinz Beck and the passage to the “Rossellinis”, two Michelin stars, next to chef Pino Lavarra. He also worked at the “Scrigno del Duomo” and later in Milan with Carlo Cracco. In 2009 he received the award as the best emerging chef in South Italy and in 2014 he won his first Michelin star.

The evening took shape as a story built through food. Among the proposals, tartare of red scampi and shrimp, smoked swordfish, salmon marinated with citrus fruits and a selection of preparations that combined contemporary elements and references to regional cuisine. The fish, coming directly from Sicily, was the starting point of every taste.

Next to tastings, an important space was dedicated to the wines of Monte Etna. The selected labels, coming from volcanic soils, accompanied the dishes with combinations designed to enhance sapidity and structure, strengthening the link between territory and product.

In line with the mission of the foundation, the event also worked as a tool for cultural promotion, as well as gastronomic. The kitchen has become a means to tell a part of Sicilian identity, connecting memory, territory and innovation in an international context like that of New York.
